The Ford Plantation, a Private Club Community, Partners with U.S. Army...

The Ford Plantation, a private club community near Savannah, Ga., recently launched an innovative partnership with Fort Stewart military base in Hinesville, Ga. to promote the use of fresh food in menu items prepared on base and to help reduce the use of canned food in the U.S. Army.

Five days a week, four Fort Stewart soldier chefs work side-by-side with The Ford Plantation’s Executive Chef Juan Carlos Rodriguez and his culinary team, learning how to prepare bread, desserts and entrees from scratch. They also harvest fresh vegetables from the organic garden at The Ford Plantation and gather fresh eggs to use in various recipes.

“The idea is for the military to look at cooking in a completely different way,” said Rodriguez. “After the soldiers go back to the base, they can train other chefs to use fresh, healthy ingredients.”

Rodriguez, a native of San Juan, Puerto Rico, is committed to sharing farm-to-table culinary strategies with military chefs, encouraging them to go beyond the military's conventional 21-day menu rotation and to incorporate fresh ingredients whenever possible. The Ford Plantation has the full support of Fort Stewart’s top brass on this particular initiative, which is designed to tie in with the First Lady's Healthy Food campaign.

“It’s about changing the way the military looks at food and sharing a different way of cooking,” said Rodriguez. “It’s the right thing to do. It’s wonderful that the Army can think outside of the box and use fresh ingredients. They have the manpower to do things in a better way in the kitchen.”

The U.S. Army hopes to expand this pilot program around the country, using the model of four-week culinary immersion sessions developed at The Ford Plantation.

Walmart Foundation Continues $2.1 Million Grant Partnership With Nrpa...

The National Recreation and Park Association (NRPA) is pleased to partner with the Walmart Foundation for a second year to expand after-school and summer feeding programs across America.

For the second year, thanks to the Walmart Foundation’s $2.1 million grant, NRPA has awarded grants to park and recreation agencies for feeding programs that will serve nearly 13 million meals to low-income children, an increase of 2.5 million meals over 2010 figures.

A report released in 2009 by the U.S. Department of Agriculture found that an estimated 49 million Americans struggle to get enough healthy food to eat. During the summer months, the number of children that receive free or reduced-price meals drops by roughly 80 percent compared to that of the school year.

“While more than 18 million children across America receive free or reduced-price meals during the school year, less than 3 million children do so in the summer,” said NRPA CEO Barbara Tulipane. “This means that more than 15 million children go hungry. NRPA is grateful to the Walmart Foundation for their generous partnership, which will enable park and recreation agencies nationwide to serve an additional 2.5 million nutritious meals to children this summer. Together, we’re fighting hunger in a real way and giving these kids a chance for a healthy and bright future.”

DoctorSolve.com Warns Americans of the PROTECT IP Act Threat to Buying...

In recent years, an increasing number of Americans have started purchasing cheaper prescription drugs from international online pharmacies such as DoctorSolve.com. This trend is in direct response to the exorbitant prices Americans pay for pharmaceuticals in their local drug stores, prices according to RxRights,org that are approximately double what patients pay in other industrialized nations. Unfortunately, a new bill with changes approved unanimously by the Senate Judiciary Committee may prevent Americans from accessing international and Canadian online pharmacies.

The PROTECT IP Act was originally developed by Senator Patrick Leahy (D-Vt) in an attempt to prevent online piracy and theft of intellectual property but includes sweeping provisions that may block access in the United States to online international pharmacies. On his website, Senator Ron Wyden (D-Or) expresses concern over the bill’s “overreaching approach to policing the internet” because the bill allows the government to block websites from American Domain Name System (DNS) servers while also requiring credit card companies, advertising networks, and even search engines to cease activity with these blocked sites.

While many Americans may understand the need to protect intellectual property and prevent illegal activity such as downloading and distributing fraudulent copies of movies or other artistic expressions, Sen. Wyden takes aim at the approach of the bill. He describes the PROTECT IP Act as a “bunker buster approach to a problem that could be solved with a strategic guided missile” and worries that the bill could “(inflict collateral damage on the foundations of the Internet, (trample) free speech, (stifle) innovation and (give) license to foreign regimes to further censor the Internet for political and commercial purposes.” Indeed, this risk to commercial freedom becomes more evident when one considers the “private right of action” section of the bill.

The PROTECT IP Act provides companies with the opportunity to pursue legal action whenever they feel their IP rights are threatened. Dr. Zickler from DoctorSolve.com is concerned that this would allow large pharmaceutical companies to lobby to block access to legitimate online pharmacies that dispense affordable drugs to American patients. And this is no small group. RxRights.org claims that “over a million Americans currently import their drugs from Canada and other international pharmacies.” More importantly, this site also maintains that the PROTECT IP Act “contains specific language that targets all non-U.S. based online pharmacies – classifying them as a risk to public health.” However, many of these sites are regulated to the same or higher standards as American pharmacies. CDC Vital Signs Report: Salmonella Continues to Sicken Millions and...

During the past 15 years, Salmonella infection, which causes more hospitalizations and deaths than any other type of germ found in food and $365 million in direct medical costs annually, has not declined. Yet during the same time, a dangerous type of E. coli STEC O157infection, responsible for the recall of millions of pounds of ground beef, has been cut almost in half, according to a new CDC Vital Sign report released today.

These trends are part of the Vital Signs report that summarizes 2010 data from CDC’s Foodborne Diseases Active Surveillance Network (FoodNet), which serves as America’s report card for food safety by tracking whether nine of the most common infections transmitted through foods are increasing or decreasing.

“Although foodborne infections have decreased by nearly one-fourth in the past 15 years, more than 1 million people in this country become ill from Salmonella each year, and Salmonella accounts for about half of the hospitalizations and deaths among the nine foodborne illnesses CDC tracks through FoodNet,” said CDC Director Thomas R. Frieden, M.D., M.P.H. “Salmonella costs hundreds of millions of dollars in direct medical costs each year. Continued investments are essential to detect, investigate, and stop outbreaks promptly in order to protect our food supply.”

Salmonella can be challenging to address because so many different foods like meats, eggs, produce, and even processed foods, can become contaminated with it and finding the source can be challenging because it can be introduced in many different ways.

In response to that challenge, the U.S. Food and Drug Administration, which regulates eggs, produce and many processed foods, has developed new rules for the egg industry to follow under its recently expanded regulatory authorities.

“Last summer, FDA began implementing new shell egg safety requirements that should significantly reduce illnesses caused by Salmonella enteritidis in eggs,” said FDA Deputy Commissioner for Foods Michael R. Taylor. “The recently enacted Food Safety Modernization Act wisely mandates a comprehensive approach to preventing illnesses from many types of Salmonella and a wide range of other contaminants that can make people sick. The current outbreak of E. coli in Europe demonstrates the importance of the new law, and FDA is committed to implementing the new law as fully as possible within available resources.”

In 2010, FoodNet sites, which include about 15 percent of the American population, reported nearly 20,000 illnesses, 4,200 hospitalizations and 68 deaths from nine foodborne infections. Of those, Salmonella caused more than 8,200 infections, nearly 2,300 hospitalizations and 29 deaths (54 percent of the total hospitalizations and 43 percent of the total deaths reported through FoodNet). CDC estimates that there are 29 infections for every lab-confirmed Salmonella infection.

The rate of E. coli O157 cases reported by FoodNet sites was 2 cases per 100,000 people in 1997 and, by 2010, had decreased to .9 cases per 100,000 people. The nearly 50 percent reduction in E. coli O157 incidence is considered significant when compared to the lack of change in Salmonella incidence. CDC credits the reduction in E. coli to improved detection and investigation of outbreaks through CDC’s PulseNet surveillance system, cleaner slaughter methods, testing of ground beef for E. coli, better inspections of ground beef processing plants, regulatory improvements like the prohibition of STEC O157 in ground beef and increased awareness by consumers and restaurant employees of the importance of properly cooking beef. The U.S. Department of Agriculture, the agency that regulates meat, has led these efforts.

“Thanks to our prevention based approach to food safety, as well as industry and consumer efforts, we have substantially reduced E. coli O157 illnesses,” said Elisabeth Hagen, M.D., Under Secretary for Food Safety in the U.S. Department of Agriculture. “This report demonstrates that we’ve made great progress. However, far too many people still get sick from the food they eat, so we have more work to do. That is why we are looking at all options, from farm to table, in-order to make food safer and prevent illnesses from E. coli, salmonella, and other harmful pathogens.”

The pathogens included in the overall 2010 rate reduction of 23 percent when compared to 1996-1998 are: campylobacter, E. coli STEC O157, listeria, salmonella, vibrio and yersinia. Rates of vibrio infection were 115 percent higher than in 1996-1998, and 39 percent higher than in 2006-2008. Most vibrio infections are the result of eating raw or undercooked shellfish.

Everyone can help reduce foodborne illness by doing the following:
    Clean. Wash hands, cutting boards, utensils, and countertops.     Separate. Keep raw meat, poultry, and seafood separate from ready-to-eat foods.     Cook. Use a food thermometer to ensure that foods are cooked to a safe internal temperature: 145°F for whole meats (allowing the meat to rest for 3 minutes before carving or consuming), 160°F for ground meats, and 165°F for all poultry.     Chill. Keep your refrigerator below 40°F and refrigerate food that will spoil.     Report suspected illness from food to your local health department.     Don’t prepare food for others if you have diarrhea or vomiting.     Be especially careful preparing food for children, pregnant women, those in poor health, and older adults. FoodNet collects information to analyze foodborne disease trends and track rates of laboratory-confirmed illnesses caused by Campylobacter, Cryptosporidium, Cyclospora, Listeria, Salmonella, Shiga toxin-producing E. coli O157 and non-O157, Shigella, Vibrio and Yersinia. Annual data are compared with data from 2006-2008 and with data from the first years of surveillance (1996-1998) to measure progress. FoodNet covers 46 million people, or about 15 percent of the American population. The sites are the states of Connecticut, Georgia, Maryland, Minnesota, New Mexico, Oregon, and Tennessee, and selected counties in California, Colorado, and New York.
